This week’s highlights include a Vancouver chef’s innovative approach to repurposing surplus food, the challenges of working underwater, and the growing concerns around AI data centers.

TJ Conwi, a Vancouver chef, witnessed significant food wastage while working at a top hotel before the pandemic. Disturbed by the amount of perfectly edible surplus produce being discarded due to minor imperfections, Conwi decided to take action.

With the onset of the pandemic in 2020, Conwi began utilizing surplus food to prepare meals for those facing food insecurity. Teaming up with Chef Sean McDonald, they co-founded ReRoot Kitchen, transforming surplus ingredients into chef-made meals for charitable causes across Vancouver.

ReRoot Kitchen has already provided over 500,000 meals to local charities by sourcing surplus food from various partners. This initiative not only reduces food waste but also addresses food insecurity in the community.

Ana-Maria Tomlinson from CSA Group is pioneering efforts to measure food waste accurately. The recently launched Canadian standard for food loss and waste aims to guide organizations in defining and measuring wastage effectively.

Conwi challenges the misconception that surplus food is undesirable by creatively utilizing ingredients like mushrooms and prawn heads to craft nutritious meals. His personal experience with food insecurity in the Philippines motivates him to give back, especially through cooking for children at the Landing Youth Centre.

Despite the alarming statistics showing increasing food insecurity rates, initiatives like ReRoot Kitchen strive to make a positive impact by repurposing surplus food to nourish those in need.
