Renowned chef Tawnya Brant describes pawpaws as a delightful surprise, emphasizing their tropical essence despite being grown locally in Canada. Brant, the owner of Yawékon Foods and host of APTN’s One Dish One Spoon, compares the flavor of pawpaws to a fusion of banana, mango, and pineapple with a creamy texture that evolves into a caramel-like sweetness as it ripens.

Historically, pawpaws have flourished in North America, predominantly in regions from Florida to Missouri to southern Ontario. Indigenous communities cultivated these fruits extensively before deforestation for agricultural purposes decreased their prevalence. Despite some remaining wild pawpaw trees in specific areas like southern Ontario, British Columbia, and Quebec, their limited shelf life and susceptibility to bruising have hindered large-scale commercial distribution.

Brant’s first encounter with pawpaws occurred when a friend introduced her to the fruit in her late mother’s garden. She learned about the Haudenosaunee tradition of transporting pawpaw trees up the eastern coast over generations due to their fondness for the fruit. Thomas Mathias, a farmer in Ontario, successfully grew pawpaws after years of trial and error, using llama manure to aid in pollination.

The Mathias Farm, run by Thomas and his sister Beth Secord, yields 250 to 300 pounds of pawpaws annually, attracting growing interest and demand. Secord expressed joy in witnessing more individuals savoring the fruit and envisions a future where pawpaw trees adorn backyard landscapes.

According to Brant, farmers’ markets or pawpaw festivals in certain regions are ideal places to find pawpaws. While versatile in culinary applications, caution is advised due to their intense flavor and toxicity of the skin and seeds. Brant’s ambition to cultivate more pawpaw trees reflects her desire to share the unique experience of this annual “treasured little gift” with a wider audience.
